Tasmanian Leatherwood Honey is a true distillate of one of the world's most magnificent ancient landscapes. For a brief 6–8 weeks each summer, the Leatherwood tree (Eucryphia lucida) blooms in the remote World Heritage-listed wilderness of western Tasmania — its delicate white flowers releasing a fresh, piquant scent that our bees transform into something extraordinary.

Low-temperature preparation
Unlike mass-produced honeys that use high heat to delay crystallisation — destroying delicate floral essences in the process — we use a special low-temperature technique that preserves the honey's natural vitality.
