Tasmanian Leatherwood Honey is a true distillate of one of the world's most magnificent ancient landscapes. For a brief 6–8 weeks each summer, the Leatherwood tree (Eucryphia lucida) blooms in the remote World Heritage-listed wilderness of western Tasmania — its delicate white flowers releasing a fresh, piquant scent that our bees transform into something extraordinary.
Spicy, aromatic and deeply complex, Leatherwood honey is celebrated by connoisseurs around the world for its unmatched floral intensity and character.
Low-temperature preparation
Unlike mass-produced honeys that use high heat to delay crystallisation — destroying delicate floral essences in the process — we use a special low-temperature technique that preserves the honey's natural vitality. The result is a fine-textured, buttery and spreadable honey that retains every nuance of its wild origin.
Naturally organic by virtue of where it's produced: ancient rainforests at latitude 42° south, swept by the Roaring Forties winds off the Great Southern Ocean. No pesticides. No agriculture. Just pure Tasmanian wilderness.
