The Blue Gum (Eucalyptus globulus) is Tasmania's floral emblem, and its honey is among the most elusive we produce. Flowering infrequently — often years apart — and with its original range in Southeast Tasmania now drastically reduced by land clearing, Blue Gum honey is a true rarity.
When it does flower, the result is extraordinary: a light-coloured honey with a soft, rich palate and a bright citrus acidity on the finish. Delicate yet distinctive, it's a world away from the bold intensity of our Leatherwood or Eucalyptus varieties.
